“Justice for Swift Cakes” inspired by Taylor Swift, including vegan options:

Justice for Swift Cakes

Ingredients
For the Cake:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup cocoa powder (for chocolate variant)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup water
  • 1/2 cup vegetable oil
  • 1 tbsp white vinegar
  • 1 tbsp vanilla extract

For the Frosting:

  • 1/2 cup vegan butter (e.g., Earth Balance)
  • 3-4 cups powdered sugar
  • 1/4 cup unsweetened cocoa powder (for chocolate variant)
  • 1/4 cup almond milk (or any plant-based milk)
  • 1 tsp vanilla extract

Directions

Cake:

  1. Preheat the oven to 350Β°F (175Β°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, sift together the flour, sugar, cocoa powder (if using), baking soda, and salt.
  3. Add water, vegetable oil, vinegar, and vanilla extract. Mix until smooth.
  4. Divide the batter evenly between the prepared pans.
  5. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Frosting:

  1. In a large bowl, beat the vegan butter until creamy.
  2. Gradually add the powdered sugar and cocoa powder (if using), beating until smooth.
  3. Add the almond milk and vanilla extract, and beat until light and fluffy.
  4. Adjust the consistency with more powdered sugar or almond milk as needed.

Assembly:

  1. Place one cake layer on a serving plate. Spread a layer of frosting on top.
  2. Place the second cake layer on top of the first and frost the top and sides of the cake.
  3. Decorate as desired. Consider adding vegan sprinkles, edible glitter, or a message like “Justice for Swift Cakes” with icing.
