Dreaming of nights with you,

“Justice for Swift Cakes” inspired by Taylor Swift, including vegan options:
Justice for Swift Cakes
Ingredients
For the Cake:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup cocoa powder (for chocolate variant)
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup water
- 1/2 cup vegetable oil
- 1 tbsp white vinegar
- 1 tbsp vanilla extract
For the Frosting:
- 1/2 cup vegan butter (e.g., Earth Balance)
- 3-4 cups powdered sugar
- 1/4 cup unsweetened cocoa powder (for chocolate variant)
- 1/4 cup almond milk (or any plant-based milk)
- 1 tsp vanilla extract
Directions
Cake:
- Preheat the oven to 350Β°F (175Β°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, sift together the flour, sugar, cocoa powder (if using), baking soda, and salt.
- Add water, vegetable oil, vinegar, and vanilla extract. Mix until smooth.
- Divide the batter evenly between the prepared pans.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
Frosting:
- In a large bowl, beat the vegan butter until creamy.
- Gradually add the powdered sugar and cocoa powder (if using), beating until smooth.
- Add the almond milk and vanilla extract, and beat until light and fluffy.
- Adjust the consistency with more powdered sugar or almond milk as needed.
Assembly:
- Place one cake layer on a serving plate. Spread a layer of frosting on top.
- Place the second cake layer on top of the first and frost the top and sides of the cake.
- Decorate as desired. Consider adding vegan sprinkles, edible glitter, or a message like “Justice for Swift Cakes” with icing.
